So my baby sister got married this month, and her theme was peacock everything! Besides being a tad of a crazy bride, she wanted this amazingly technically difficult cake. No sweat I thought I can do that.... until I tried. She wanted carrot cake with cream cheese icing on an inverted tier cake. The carrot cake she chose was so rich and heavy that the cake refused to stand. After a few failed attempts I called the bride and told her there was no way in this lifetime that she was getting a carrot cake with cream cheese icing with inverted tiers.
Needless to say she relented, I got to make it my way and it turned out great!
